Books to the table: Harry Potter – Butterbeer Cupcakes

So well, this recipe was supposed to go up the day of Harry Potter Book Night but I was  extremely tired and then I was off camping the next day for the weekend. Then on the monday, I started university so well. I am  finally getting this, up.

, i present to you Butterbeer cupcakes.

These are seriously amazing. They are moist and melt in your mouth. I make a lot of cakes and desserts and this is by far one of the my favourites that I have ever made.

It’s also pretty easy to make, there is 4 simple steps; cream the butter and sugars, mix the wet ingredients in, mix the dry ingredients and then cook.

I haven’t tried butterbeer but after looking online and re-reading the books, I think this is similar to what butterbeer taste like.

Butterbeer Cupcakes

Prep Time: 40 minutes

Cook Time: 18 minutes

Total Time: 1 hour

Butterbeer Cupcakes

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick) butter, unsalted
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup cream soda
  • 2 tablespoons butterscotch topping or 1 tablespoon butterscotch essence
  • 1 teaspoon vanilla
  • Frosting

Instructions

Cupcakes
1. Preheat the oven to 350 degrees F or 180 degrees C and line cupcake tins with cupcake wrappers.
2. In a bowl, sift together the dry ingredients and set aside.
3. In a separate bowl,or electric mixer, cream together the butter and the sugars untill lighter in colour.
4. Beat in the eggs one at a time.
5. Once the eggs are well incorporated, add in the milk and cream soda.
6. Add the dry ingredients and mix well.
7. Add vanilla,and butterscotch.
8. Fill cupcake cases about 3 quarters of the way.
9. Bake for 15-18 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
10. Allow the cupcakes to cool on a rack
For the Frosting
1. Make a simple buttercream
2. Add 1 drop of butterscotch topping or essence
3. Pipe or Spread the frosting on the cupcake when TOTALLY cooled.
